Tender chicken, earthy shiitake mushrooms, and a silky Parmesan cream sauce that coats every bite, this Creamy Chicken & Mushrooms Pasta is definitely a rich and satisfying dish. It’s a quick weeknight dinner that tastes like it came from your favorite restaurant.
INGREDIENTS:
- 250 grams of uncooked bow of Pasta
- ¼ cup Light Olive Oil
- 3 tbsp of Unsalted Butter
- 2 tbsp Garlic, chopped
- 3 pieces of Chicken Breast Fillet, cut into cubes
- 250 grams of Shiitake Mushrooms, cut into slices
- 3 cups of Heavy Cream or Cooking Cream
- ¼ cup of Parmesan Cheese
- ½ tsp Ground Oregano
- Salt & Pepper, to taste
PROCEDURE:
- Start cooking the pasta by boiling salted water. Pour some oil and add the pasta. Drain once al dente.
- Time to cook the pasta. In a pan, heat oil over medium heat. Add the chicken and season it with salt and pepper. Cook until tender and then transfer it to a plate.
- In the same pan, add oil and sauté the shiitake mushrooms. Add the garlic and sauté for a few seconds. Put the butter and pour the cooking cream. Simmer it in a low heat until thickened.
- Add the pasta to the cream.
- Mix until the pasta is coated with sauce.
- Season it with salt and pepper.
- Put the chicken back into the pan. Mix it really well. Add some Parmesan cheese and sprinkle some ground oregano. Simmer for 1 minute.
- To assemble, put the pasta into a serving dish. Serve while hot.
