These Cereal Butter Prawns are irresistibly crispy, buttery, and packed with rich savory-sweet flavor, with crunchy cereal coating every succulent prawn. An easy homemade version, this delivers the same restaurant-style taste you love, proving you don’t need Nestum cereal to create an incredibly delicious seafood dish at home.
INGREDIENTS:
- 500 grams medium Prawns
- ¼ cup All-Purpose Flour
- 2 Eggs, beaten
- ¼ cup Light Olive Oil
- 2 tbsp. Garlic, chopped finely
- 1 cup Quick Cooking Oatmeal
- ¼ cup Milk Powder
- 1/4 cup Unsalted Butter 4-6 pieces of Red Chili
- 3-5 pieces of Curry Leaves or Kaffir Lime Leaves
- Salt & Pepper, to taste
PROCEDURE:
- Start by trimming the whiskers and legs of the prawns, and devein the prawns, but keep the skin on.
- Dip the prawns in the egg and coat it with flour.
- Using a big frying pan, heat oil over medium heat. Start frying the prawns for 2 minutes on each side. Season it with salt and pepper. Transfer to a plate.
- In the same frying pan with less oil, add the butter and garlic. Sauté for 1 minute.
- Add the oatmeal and milk powder to the pan. Mix them well. Add a little oil and season it with salt.
- Once the oatmeal has been toasted, add the kaffir lime leaves and red chili.
- Time to add the prawns and then mix everything together.
- To assemble, transfer the cereal butter prawns to a serving dish. Ready to serve.
