INGREDIENTS:
Chicken with 40 Cloves
- 1 – 1.3 kilogram Whole Chicken
- 40 cloves of garlic, peeled
- 4 tbsp Unsalted Butter
- ½ Lemon, cut into slices
- Salt & Pepper, to taste
Lemon Spaghetti
- 250 grams Thin Spaghetti
- ¼ cup Olive Oil
- ¼ cup Lemon Juice
- Zest of 1 Lemon
- 2 tbsp Fresh Parsley, chopped
- ¼ cup Parmesan Cheese, grated
- Salt & Pepper, to taste
PROCEDURE:
- Preheat the oven to 220 degrees Celsius.
- Pat dry the chicken with a paper towel. Rub the unsalted butter all over the chicken, including the cavity. Season it with salt and pepper. Put some lemon in the cavity to add some flavor.
- Tie the legs for even cooking. Add the 40 cloves of garlic all over the baking pan. Put the butter in the cloves to help them cook easily.
- Bake chicken in the oven for 50-60 minutes.
- Prepare a pot of salted boiling water for the lemon spaghetti.
- Add the pasta and cook until al dente. Transfer it to a bowl.
- While the pasta is hot, add the olive oil, lemon juice, and lemon zest. Season it with salt and give a good stir. Add some parsley and freshly grated parmesan.
- Season it with pepper and mix everything well.
- Since the pasta is ready, take the chicken from the oven. Remove the kitchen twine and rest it for 5 minutes before serving.
- Decorate your pasta with some lemon slices and add more Parmesan cheese and pepper.
- Serve while hot.
