This Salmon in Lime Coconut Sauce combines tender, flaky salmon with a silky coconut milk sauce infused with bright, zesty lime flavor. Rich yet refreshing, this easy salmon recipe delivers the perfect balance of creamy, citrusy goodness that makes every bite unforgettable.
INGREDIENTS:
- ¼ cup Light Olive Oil
- 4 pieces Salmon Fillet (250 grams each)
- 1 tbsp Garlic, chopped
- 1 tbsp Ginger, grated
- 1 tbsp Lemongrass, white part only, cut into rings
- 2 tbsp Chili Garlic Paste
- 2 cups Fresh Coconut Milk
- 2 tsp Thai Fish Sauce
- 1 tbsp Fresh Lime Juice
- 4-6 slices of Lime
- 2 tbsp Fresh Cilantro, chopped
- Salt & Pepper, to taste
PROCEDURE:
- Season both sides of the salmon with salt and pepper.
- Heat the oil over medium heat. Once the oil is ready, pan-fry the salmon for 2-3 minutes on each side. Transfer it to a plate.
- Using the same frying pan with less oil, sauté the garlic for 1 minute. Add the ginger, lemongrass, and chili garlic paste. Sauté for 5 minutes.
- Pour the coconut milk, Thai fish sauce, and squeeze some fresh lime juice.
- Season lightly with salt. Mix well until everything is well blended.
- Add chopped cilantro and some slices of lime. Simmer for 5 minutes.
- Put the salmon fillet in the pan and cover it with the sauce.
- To assemble, place the salmon fillet together with the lime coconut sauce in a serving dish. Ready to serve.
