Coconut Shrimps with Spicy Mango Sauce

Crunchy and juicy shrimps coated with coconut flakes are more delicious when dipped into this spicy mango sauce!

  • Serves 6 people
  • Prep Time: 20 minutes
  • Cook Time: 10 minutes

Ingredients

Spicy Mango Sauce

  • 1 piece Big Ripe Mango  cut into big slices
  • 1/4 cup Coconut Cream
  • 1/4 cup Fresh Cilantro Leaves
  • 2 tablespoons Red Onion  chopped coarsely
  • teaspoons Thai Fish Sauce
  • 1 piece Small Red Chili  cut into slices
  • Salt  to taste

Coconut Shrimps

  • 1 kilogram Fresh Medium Shrimps  peeled and deveined (keep the tails on)
  • 1 cup Panko Breadcrumbs
  • 1 cup Desiccated Coconut
  • 2 pieces Eggs  whisked
  • 2 cups Vegetable Oil

Procedure

  1. For the spicy mango sauce, combine everything in a food processor. Puree everything until smooth.
  2. Transfer to a bowl. Season lightly with salt and mix well. Set it aside.
  3. Season the shrimps with salt and pepper.
  4. Using a tray or big plate combine panko breadcrumbs and desiccated coconut. Season the mixture with salt. Mix until well combined.
  5. Dip the shrimps into the whisked eggs and then dry mixture. Place the shrimps on a tray.
  6. Heat the oil over medium heat. Cook the shrimps for 1 minute on each side. When the shrimps are starting to curl like letter C and turn to a golden brown, then it is perfectly cooked.
  7. Place the shrimps on a serving plate. Serve with spicy mango sauce. Garnish with some red chili and cilantro leaves.
