Coconut Shrimps with Spicy Mango Sauce

 Imagine crunchy and juicy shrimps coated with coconut flakes and dipped in sweet and spicy mango sauce.

Try this recipe and experience a truly tropical party in your mouth!

  • Serves 6 people
  • Prep Time: 20 minutes
  • Cook Time: 10 minutes

Ingredients

Spicy Mango Sauce

  • 1 piece Big Ripe Mango, cut into big slices
  • 1/4 cup Coconut Cream
  • 1/4 cup Fresh Cilantro Leaves
  • 2 tablespoons Red Onion, coarsely chopped
  • teaspoons Thai Fish Sauce
  • 1 piece Small Red Chili  cut into slices
  • Salt to taste

Coconut Shrimps

  • 1-kilogram fresh medium Shrimps, peeled and deveined (keep the tails on)
  • 1 cup Panko Breadcrumbs
  • 1 cup Desiccated Coconut
  • 2 Eggs, whisked
  • 2 cups Vegetable Oil

Procedure

Spicy Mango Sauce

  1. Combine all the ingredients in a food processor. Puree everything until smooth.
  2. Transfer to a bowl, season lightly with salt and mix well. Set aside.

Shrimps

  1. Season the shrimps with salt and pepper.
  2. Using a tray or big plate, combine panko breadcrumbs and desiccated coconut. Season the mixture with salt. Mix until well combined.
  3. Dip the shrimps in whisked eggs then onto the dry mixture.
  4. Place the shrimps on a tray.
  5. Heat the oil over medium heat. Cook the shrimps for 1 minute on each side. You’ll know when the shrimps are cooked evenly when they start to curl like the letter C and when they turn golden brown in color.
  6. Place the shrimps on a serving plate. Serve with spicy mango sauce. Garnish with some red chili and cilantro leaves.
