1kilogramfresh medium Shrimpspeeled and deveined (keep the tails on)
1cupPanko Breadcrumbs
1cupDesiccated Coconut
2Eggswhisked
1cupsVegetable Oil
Instructions
Spicy Mango Sauce
Combine all the ingredients in a food processor. Puree everything until smooth.
Transfer to a bowl, season lightly with salt and mix well. Set aside.
Shrimps
Season the shrimps with salt and pepper.
Using a tray or big plate, combine panko breadcrumbs and desiccated coconut. Season the mixture with salt. Mix until well combined.
Dip the shrimps in whisked eggs then onto the dry mixture.
Place the shrimps on a tray.
Heat the oil over medium heat. Cook the shrimps for 1 minute on each side. You’ll know when the shrimps are cooked evenly when they start to curl like the letter C and when they turn golden brown in color.
Place the shrimps on a serving plate. Serve with spicy mango sauce. Garnish with some red chili and cilantro leaves.
