Shrimp Tacos With Pineapple Mango Salsa

Quick and easy shrimp tacos with a vibrant refreshing taste of fruit salsa! A perfect summer dish to share with family and friends!

Ingredients

Pineapple Mango Salsa

  • 1 whole Fresh Pineapple  medium dice
  • 1 piece Ripe Mango  medium dice
  • 1 medium Red Onion  small dice
  • 2 medium Plum Tomatoes  small dice
  • 3 tablespoons Fresh Cilantro  chopped coarsely
  • tablespoons Fresh Lime Juice

Shrimp Tacos

  • 1 kilograms Fresh Medium Shrimps  cleaned and deveined
  • tablespoons Light Olive Oil
  • 3 tablespoons Garlic  chopped finely
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Ground Cumin
  • Pinch Cayenne Pepper
  • cups Iceberg Lettuce  Shredded
  • 8 pieces Flour Tortillas
  • 1 cup Sour Cream
  • Salt & Pepper, to taste

Procedure

Pineapple Mango Salsa
  1. In a large bowl, combine all the ingredients for pineapple mango salsa. Season with salt. Keep in the fridge until ready to use.
Shrimp Tacos
  1. Using a large frying pan, heat oil over medium heat. Add the garlic and sauté until starting to color.
  2. Put the shrimps and fry for few seconds.
  3. Add the chili powder, paprika, cumin, and cayenne pepper and sauté for few seconds or until aromatic.
  4. Season the shrimps with salt and pepper and continue to cook until tender.
  5. Transfer the shrimps to a serving plate.
  6. Heat tortillas on griddle or oven toaster.
  7. Assemble shrimp tacos with pineapple mango salsa and iceberg lettuce. Serve with sour cream.
