Ingredients

Pineapple Mango Salsa

  • 1 whole Fresh Pineapple medium dice
  • 1 piece Ripe Mango medium dice
  • 1 medium Red Onion  small dice
  • 2 medium Plum Tomatoes small dice
  • 3 tablespoons Fresh Cilantro chopped coarsely
  • 2 tablespoons Fresh Lime Juice

Shrimp Tacos

  • 1 kilogram Fresh Medium Shrimps   cleaned and deveined
  • 3 tablespoons Light Olive Oil
  • 3 tablespoons Garlic   chopped finely
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Smoked Paprika
  • 1/2  teaspoon Ground Cumin
  • Pinch  Cayenne Pepper
  • 2 cups  Iceberg Lettuce Shredded
  • 8 pieces Flour Tortillas
  • 1 cup Sour Cream
  • Salt & Pepper to taste

Instructions

Pineapple Mango Salsa

  • In a large bowl, combine all the ingredients for pineapple mango salsa.
  • Season with salt.
  • Keep in the fridge until ready to use.

Shrimp Tacos

  • Using a large frying pan, heat oil over medium heat.
  • Sauté the garlic until it starts to color.
  • Put the shrimps in and fry for few seconds.
  • Add the chili powder, paprika, cumin, and cayenne pepper and sauté for few seconds or until aromatic.
  • Season the shrimps with salt and pepper and continue to cook until tender.
  • Transfer the shrimps onto a serving plate.
  • Heat tortillas on a griddle or an oven toaster.
  • Assemble shrimp tacos with pineapple mango salsa and iceberg lettuce.
  • Serve with sour cream.
