Ingredients
Pineapple Mango Salsa
- 1 whole Fresh Pineapple medium dice
- 1 piece Ripe Mango medium dice
- 1 medium Red Onion small dice
- 2 medium Plum Tomatoes small dice
- 3 tablespoons Fresh Cilantro chopped coarsely
- 2 tablespoons Fresh Lime Juice
Shrimp Tacos
- 1 kilogram Fresh Medium Shrimps cleaned and deveined
- 3 tablespoons Light Olive Oil
- 3 tablespoons Garlic chopped finely
- 1 teaspoon Chili Powder
- 1/2 teaspoon Smoked Paprika
- 1/2 teaspoon Ground Cumin
- Pinch Cayenne Pepper
- 2 cups Iceberg Lettuce Shredded
- 8 pieces Flour Tortillas
- 1 cup Sour Cream
- Salt & Pepper to taste
Instructions
Pineapple Mango Salsa
- In a large bowl, combine all the ingredients for pineapple mango salsa.
- Season with salt.
- Keep in the fridge until ready to use.
Shrimp Tacos
- Using a large frying pan, heat oil over medium heat.
- Sauté the garlic until it starts to color.
- Put the shrimps in and fry for few seconds.
- Add the chili powder, paprika, cumin, and cayenne pepper and sauté for few seconds or until aromatic.
- Season the shrimps with salt and pepper and continue to cook until tender.
- Transfer the shrimps onto a serving plate.
- Heat tortillas on a griddle or an oven toaster.
- Assemble shrimp tacos with pineapple mango salsa and iceberg lettuce.
- Serve with sour cream.
