This savory Pork Fried Rice is a delicious way to transform leftover rice into a flavorful, satisfying meal. Use chilled, day-old rice to help keep the grains separate and fluffy, creating that classic fried rice texture without becoming soggy.
INGREDIENTS:
- 3 tbsp Vegetable Oil
- 2 tbsp Red Onion, small dice
- 1 tbsp Garlic, chopped finely
- 2 tbsp Ginger, grated
- 1 cup Carrots, medium-dice
- 3 tbsp. Water
- 500 grams Ground Pork
- 4 cups Cooked Rice
- 3 medium Eggs, beaten
- 2 tbsp Low-Sodium Soy Sauce
- 2 tbsp Hoisin Sauce
- 2 tbsp Spring Onions, cut into slices
- ½ cup Green Peas, frozen
- 2 teaspoons Sesame Oil
- Salt & Pepper, to taste
PROCEDURE:
- Using a wok, heat oil over medium heat. Add the onions, garlic, and ginger. Sauté for a few seconds until aromatic and then add the carrots. Add a little water for the carrots to cook faster.
- Add the ground pork. Season it with salt and pepper.
- Add the cooked rice. Mix until everything is well incorporated.
- Mix the hoisin and soy sauce. Pour the sauce all over the rice. Mix it quickly.
- Lower the heat. Create a space on one side of the wok. Add a little oil and pour the eggs. Sit it for a few seconds before scrambling the eggs. Toss the eggs over the rice.
- Add the spring onions and green peas.
- For the last part, pour some sesame oil. Stir well.
- To assemble, transfer it to a serving plate. Serve while hot.
