Grilled Lime-Salmon with Mango-Avocado and Quinoa Salad

Ingredients

  • 3 tbsp Light Olive Oil
  • 2 tbsp Fresh Lime Juice
  • 3 cloves Garlic chopped finely
  • Sea Salt to taste
  • Freshly Ground Black Pepper to taste

Quinoa Salad

  • 1 cup Quinoa uncooked
  • 1/2 tsp Kosher Salt
  • 2 tbsp Red Onion finely chopped
  • 2 tbsp Fresh Lime Juice
  • 1 medium Ripe Mango peeled and diced
  • 3 tbsp Red Onion finely chopped
  • 1 medium Avocado peeled and diced
  • Salt to taste

Instructions

  • Marinate the salmon in lime juice and garlic. Place in the fridge for 20 minutes.
  • Meanwhile, cook quinoa according to package directions. Let it cool at room temperature.
  • Place quinoa in a bowl, add cherry tomatoes, red onions, fresh lime juice, and season with salt.
  • For the mango-avocado, combine everything in a bowl and season with salt.
  • Oil the grill pan and preheat over medium heat.
  • Season both sides of the salmon with salt and pepper, and coat both sides with olive oil.
  • Grill the salmon for 3 minutes per side or until firm to touch.
  • To plate, divide the quinoa salad among two plates. Top with salmon fillet and mango-avocado mixture. Serve immediately.
