This Grilled Cumin Chicken is juicy, smoky, and packed with the warm, earthy flavor of cumin, then topped with a bright and herb-packed chimichurri sauce. It’s a delicious balance of savory, zesty, and fresh flavors that makes an easy yet impressive meal.
INGREDIENTS:
Chimichurri Sauce
- 1 tbsp Red Onion, chopped
- 2 tbsp Garlic, chopped
- ½ cup Fresh Parsley, chopped
- ½ cup Fresh Cilantro, chopped
- 1 tbsp Fresh Oregano, chopped
- 1 tbsp Red Bell Pepper, chopped
- ¼ cup Red Wine Vinegar
- ¾ cup Light Olive Oil
- Salt & Pepper, to taste
Grilled Cumin Chicken
- 4 pieces of Chicken Breast
- 1 tsp Ground Cumin
- 2 tbsp Light Olive Oil
- Salt & Pepper, to taste
- 2 tbsp. Light Olive Oil, for grilling
PROCEDURE:
- Start marinating the chicken in a baking tray. Put some cumin powder on both sides and pour some olive oil. Cover it with cling wrap and marinate in the fridge for 30 minutes.
- In a mixing bowl, mix the ingredients of chimichurri sauce. Add the chopped parsley, cilantro, fresh oregano, chopped garlic, red onions, red bell pepper, red wine vinegar, and light olive oil. Mix well until blended. Season it with salt and pepper. Mix and set it aside.
- Season the cumin chicken with salt and pepper before grilling.
- Brush some oil in the griddle and turn the heat to medium.
- Start grilling the chicken. Turn sides for even cooking.
- To assemble, place the cumin chicken in a serving dish. Pour the chimichurri sauce on top and serve it while hot.
