Grilled Chicken and Beef Kebabs with Homemade Pita Bread, Garlic-Yogurt Sauce and Grilled Tomatoes

Making kebabs is great for weekend parties! Serve it with homemade pita bread, grilled tomatoes and garlic-yogurt sauce to create a wonderful dish!

Ingredients

Homemade Pita Bread

  • 4 cups All-Purpose Flour  sifted
  • tablespoons Instant Yeast
  • 4 teaspoons Olive Oil
  • 1 1/2 teaspoons Kosher Salt
  • 1 1/2 cups Water  warm

Chicken Kebabs

  • 500 grams Ground Chicken  thigh part
  • 2 tablespoons Garlic  minced
  • 2 tablespoons White Onion  minced
  • 1 teaspoon Turmeric Powder
  • teaspoon Ground Cumin
  • 1 teaspoon Kosher Salt
  • pinch of Freshly Ground Black Pepper  to taste

Beef Kebabs

  • 500 grams Ground Beef
  • 2 tablespoons Garlic  minced
  • tablespoons White Onion  minced
  • teaspoon Turmeric Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Kosher Salt
  • pinch of Freshly Ground Black Pepper

Garlic-Yoghurt Sauce

  • 1 cup Plain Yogurt
  • 2 tablespoons Garlic  minced
  • pinch of Turmeric Powder
  • pinch of Salt  to taste

Grilled Tomatoes

  • 12 medium Plum Tomatoes
  • Cooking and Assembling
  • 3 tablespoons Light Olive Oil  for grilling of kebabs and tomatoes
  • 3 tablespoons Light Olive Oil  for pita bread
  • 1 head Iceberg Lettuce  rinsed and trimmed

Procedure

Homemade Pita Bread
  1. Combine flour, instant yeast and salt with a mixer bowl. Use dough attachment. Turn on to low speed for few seconds to combine dry ingredients.
  2. Add the oil and warm water. Continue mixing on low speed until the liquids are well blended into the dry ingredients.
  3. Increase the mixer speed to medium and at this stage, the dough will start kneading. It will take about 5-7 minutes until the dough starts to form a ball. When the dough is already smooth and not sticky, remove from the mixer.
  4. Flour your woking surface. Knead the dough for few seconds and tuck all the sides in to form a ball.
  5. Lightly brush the mixer bowl with oil and place the dough back in the mixer bowl. Put some oil on top of the dough. Cover with cling wrap. Place in warm temperature and let it rise until it has doubled in size, it will take about 1-2 hours.
  6. Once the dough has doubled in size, remove from the mixer bowl. Knock it down to deflate the air. Roll it out and cut into 12 portions. Form each piece into a ball. Cover it with a damp cloth and let it rest for 10 minutes.
  7. Roll out the dough into a round shape. Flour your working surface and the dough as well when rolling out. Place pita bread in between of parchment paper. Cover the prepared pita bread with a damp cloth and set it aside until ready to use.
Chicken and Beef Kebabs
  1. For chicken kebabs, using a big bowl. Combine ground chicken, garlic, onions, ground cumin, turmeric powder, salt and freshly ground black pepper. Shape the ground chicken into 7 pieces of kebabs. Place it on a tray with parchment paper. Cover with cling wrap and keep in the fridge until ready to use.
  2. For beef kebabs, using a big bowl. Combine ground chicken, garlic, onions, ground cumin, turmeric powder, salt and freshly ground black pepper. Shape the ground chicken into 7 pieces of kebabs. Place it on a tray with parchment paper. Cover with cling wrap and keep in the fridge until ready to use.
Ready to Cook
  1. Prepare the garlic-yogurt sauce. Combine yogurt, garlic, turmeric powder and salt in a small bowl. Mix until well combined. Keep in the fridge until ready to use.
  2. Using a griddle. Heat the oil over medium heat. Add the tomatoes on one side. Put the kebabs and grill until golden brown and tender, it will take about 3-5 minutes on each side. Transfer the beef kebabs to a plate.
  3. Put the chicken kebabs to griddle and grill until golden brown and tender, it will take about 3-5 minutes on each side. Transfer the chicken kebabs to a plate.
  4. Continue to grill the tomatoes until they are soft, don’t forget to turn all the sides for even cooking. Transfer the tomatoes to a plate
  5. Using a cast-iron skillet. Heat 1 teaspoon of oil over medium-high heat. Once the pan is starting to smoke. Add the pita bread, and watch it closely as pita bread cooks fast. It will take about 30 seconds on each side. When the pita bread is puffing up, it means you are doing a great job and it’s time to turn the other side of pita bread. Transfer the pita bread to a serving plate.
  6. Arrange the iceberg lettuce on a big serving plate. Add the chicken and beef kebabs. Put the grilled tomatoes around the kebabs. Serve with pita bread and garlic-yogurt sauce.
