Chicken Souvlaki with Mushrooms and Couscous Salad is a fresh and flavorful Mediterranean-inspired meal featuring juicy grilled chicken skewers seasoned to perfection. Paired with a light mushroom and couscous salad, it delivers a delicious combination of smoky, savory, and refreshing flavors that make every bite satisfying and memorable.
INGREDIENTS:
Chicken Souvlaki
- 500 grams Chicken Thigh Fillet, cut into pieces
- ½ cup Greek Yogurt
- Pinch of Paprika
- 2 medium Red Onions, cut into big dice
- 2 medium red bell peppers, cut into big dice
- 2 tbsp Light Olive Oil
- Salt & Pepper, to taste
Mushroom & Couscous Salad
- 200 grams Couscous
- 3 tbsp Light Olive Oil
- 250 grams of Shiitake Mushrooms, cut into slices
- 1 tbsp Garlic, chopped finely
- ½ cup Cucumber. Cut into small dice
- ½ cup Red Bell Pepper, cut into small dice
- ¼ cup Red Onions, cut into small dice
- 3 tbsp Fresh Lemon Juice
- 1 tbsp Fresh Parsley, chopped finely
- Salt & Pepper, to taste
Garlic-Yogurt Sauce
- ½ cup Greek Yogurt
- 2 tsp Garlic, chopped finely
- 2 tsp Fresh Dill, chopped finely
- Salt & Taste
PROCEDURE:
- Cut the chicken into bite-sized pieces. Marinate it with yogurt and paprika. Mix it well. Cover with cling wrap and marinate in the fridge for 1-2 hours.
- Start cooking the couscous according to package instructions.
- While cooling down the couscous, sauté the mushrooms. Heat the oil over medium heat. Add the garlic and shiitake mushrooms. Season with salt and pepper. Cook until soft and transfer it to a plate.
- Start mixing the couscous and mushrooms. In a mixing plate, add the cucumber, red bell pepper, and chopped onions. Squeeze lemon all over the salad and season with salt and pepper. Add the mushrooms and chopped fresh parsley. Mix everything until well blended. Cover with cling wrap and set it aside.
- Arrange the chicken souvlaki using skewers. Aside from the chicken, you can also add bell pepper and onions. Season both sides with salt and pepper.
- Pour some oil in a grilling pan and turn the heat to medium. Start cooking the chicken souvlaki.
- For the last step, make a garlic-yogurt sauce. Chop some fresh dill and add it to the yogurt. Put some garlic and mix it all together. Season with salt.
- To assemble, place the chicken souvlaki and couscous salad in a serving dish together with the garlic-yogurt sauce. Ready to serve.
