Balsamic-Glazed Salmon With Strawberry Mango Salsa

This is an easy and romantic dinner recipe. It has layers of flavors that will definitely excite your taste buds! Serve it with your preferred grilled veggies to complete the dish!

Ingredients

Balsamic-Glazed Salmon

  • 4 pieces (200-250 grams each) Salmon Fillets  skin removed
  • 1/4 cup Balsamic Vinegar
  • 2 tablespoons Raw Honey
  • 3 cloves Garlic  crushed
  • 3 tablespoons Light Olive Oil
  • Salt & Pepper  to taste

Strawberry Mango Salsa

  • 1 3/4 cups Fresh Strawberries  medium dice
  • 1 piece Ripe Mango  medium dice
  • 1 piece Medium Red Onion  small dice
  • 3 tablespoons Fresh Cilantro  chopped coarsely
  • 2 tablespoons Fresh Lime Juice
  • Salt and Pepper  to taste

Grilled Asparagus

  • 400 grams Asparagus  stalks removed and cut into slices
  • 3 tablespoons Light Olive Oil
  • Salt and Pepper  to taste

Procedure

  1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
  2. Prepare all the ingredients for strawberry mango salsa. Combine everything into a medium bowl. Season with salt. Chill in the fridge until ready to use.
  3. Combine balsamic vinegar, raw honey, and garlic in a small sauce pan. Bring to a boil over medium heat, about 5 minutes. Remove from heat.
  4. Divide the balsamic mixture into two. Cool it down and reserve the other half for glazing the salmon once it is cooked.
  5. Get a baking tray and place parchment paper. Put the salmon fillets. Season with salt and pepper. Brush the salmon with balsamic glaze.
  6. Put the salmon in the oven for 15 minutes. Don’t forget to brush the salmon with balsamic glaze every 5 minutes.
  7. Five minutes before the salmon finished cooking the oven start grilling the asparagus. Using a griddle, heat oil over medium heat. Put the asparagus and season with salt and pepper. Cook the asparagus until tender, about 5 minutes. Transfer to a plate.
  8. Remove the salmon from the oven. Transfer to a serving dish.
  9. Prepare 4 serving plates. Place the salmon in each plate, top it with strawberry mango salsa. Add the asparagus. Serve while hot.
