Balsamic-Glazed Salmon With Strawberry Mango Salsa

Ingredients

Balsamic-Glazed Salmon

  • 4 pieces (200-250 grams each) Salmon Fillets  skin removed
  • 1/4 cup Balsamic Vinegar
  • 2 tablespoons Raw Honey
  • 3 cloves Garlic  crushed
  • 3 tablespoons Light Olive Oil
  • Salt & Pepper  to taste

Strawberry Mango Salsa

  • 1 3/4 cups Fresh Strawberries  medium dice
  • 1 piece Ripe Mango  medium dice
  • 1 piece Medium Red Onion  small dice
  • 3 tablespoons Fresh Cilantro  chopped coarsely
  • 2 tablespoons Fresh Lime Juice
  • Salt and Pepper  to taste

Grilled Asparagus

  • 400 grams Asparagus  stalks removed and cut into slices
  • 3 tablespoons Light Olive Oil
  • Salt and Pepper  to taste

Procedure

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).

Strawberry Mango Salsa

  1. Prepare all the ingredients for strawberry mango salsa. Combine everything into a medium bowl. Season with salt. Chill in the fridge until ready to use.

Balsamic Glaze

  1. Combine balsamic vinegar, raw honey, and garlic in a small saucepan.
  2. Bring to a boil over medium heat, about 5 minutes. Remove from heat.
  3. Divide the balsamic mixture into two. Let it cool and reserve the other half for glazing the salmon once it is cooked.

Salmon

  1. Place a parchment paper on a baking tray.
  2. Put the salmon fillets and season with salt and pepper.
  3. Brush the salmon with the balsamic glaze.
  4. Place the salmon in the oven and bake for 15 minutes. Brush the salmon with balsamic glaze every 5 minutes to keep it moist.

Grilled Asparagus

  1. Start grilling the asparagus, five minutes before the salmon is done.
  2. Heat the griddle over medium heat. Put the asparagus on and season with salt and pepper. Cook the asparagus until tender, about 5 minutes. Transfer to a plate.

Assembling

  1. Remove the salmon from the oven. Transfer to a serving dish.
  2. Prepare 4 serving plates.
  3. Place the salmon in each plate.
  4. Top it with strawberry mango salsa.
  5. Add the asparagus.
  6. Best served while hot.
