Ingredients
Balsamic-Glazed Salmon
- 4 pieces (200-250 grams each) Salmon Fillets skin removed
- 1/4 cup Balsamic Vinegar
- 2 tablespoons Raw Honey
- 3 cloves Garlic crushed
- 3 tablespoons Light Olive Oil
- Salt & Pepper to taste
Strawberry Mango Salsa
- 1 3/4 cups Fresh Strawberries medium dice
- 1 piece Ripe Mango medium dice
- 1 piece Medium Red Onion small dice
- 3 tablespoons Fresh Cilantro chopped coarsely
- 2 tablespoons Fresh Lime Juice
- Salt and Pepper to taste
Grilled Asparagus
- 400 grams Asparagus stalks removed and cut into slices
- 3 tablespoons Light Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
Strawberry Mango Salsa
- Prepare all the ingredients for strawberry mango salsa. Combine everything into a medium bowl. Season with salt. Chill in the fridge until ready to use.
Balsamic Glaze
- Combine balsamic vinegar, raw honey, and garlic in a small saucepan.
- Bring to a boil over medium heat, about 5 minutes. Remove from heat.
- Divide the balsamic mixture into two. Let it cool and reserve the other half for glazing the salmon once it is cooked.
Salmon
- Place a parchment paper on a baking tray.
- Put the salmon fillets and season with salt and pepper.
- Brush the salmon with the balsamic glaze.
- Place the salmon in the oven and bake for 15 minutes. Brush the salmon with balsamic glaze every 5 minutes to keep it moist.
Grilled Asparagus
- Start grilling the asparagus, five minutes before the salmon is done.
- Heat the griddle over medium heat. Put the asparagus on and season with salt and pepper. Cook the asparagus until tender, about 5 minutes. Transfer to a plate.
Assembling
- Remove the salmon from the oven. Transfer to a serving dish.
- Prepare 4 serving plates.
- Place the salmon in each plate.
- Top it with strawberry mango salsa.
- Add the asparagus.
- Best served while hot.
