Ingredients
Spicy Mango Sauce
- 1 piece Big Ripe Mango cut into big slices
- 1/4 cup Coconut Cream
- 1/4 cup Fresh Cilantro Leaves
- 2 tablespoons Red Onion coarsely chopped
- 2 teaspoons Thai Fish Sauce
- 1 piece Small Red Chili cut into slicesSalt to taste
Coconut Shrimps
- 1 kilogram fresh medium Shrimps peeled and deveined (keep the tails on)
- 1 cup Panko Breadcrumbs
- 1 cup Desiccated Coconut
- 2 Eggs whisked
- 1 cups Vegetable Oil
Instructions
Spicy Mango Sauce
- Combine all the ingredients in a food processor. Puree everything until smooth.
- Transfer to a bowl, season lightly with salt and mix well. Set aside.
Shrimps
- Season the shrimps with salt and pepper.
- Using a tray or big plate, combine panko breadcrumbs and desiccated coconut. Season the mixture with salt. Mix until well combined.
- Dip the shrimps in whisked eggs then onto the dry mixture.
- Place the shrimps on a tray.
- Heat the oil over medium heat. Cook the shrimps for 1 minute on each side. You’ll know when the shrimps are cooked evenly when they start to curl like the letter C and when they turn golden brown in color.
- Place the shrimps on a serving plate. Serve with spicy mango sauce. Garnish with some red chili and cilantro leaves.
