Ingredients
- 1 cup Quinoa
- 2 cups Water
- 2 Corn Ears kernels removed
- 1 tbsp Olive Oil
- 1 Ripe Mango diced
- 1/4 cup Grapes cut into halves
- 1 Cucumber seeded and diced
- 2 tbsp Lemon Juice
- 2 tbsp Flat Parsley coarsely chopped
- Salt to taste
Instructions
- Rinse quinoa until water runs clear, drain and transfer to a medium pot.
- Add 2 cups of water and bring to a boil over medium heat.
- Cover and reduce heat and cover then let simmer for approximately 15 minutes.
- Preheat an indoor or outdoor grill to medium heat and lightly oil grate.
- Rub the ear corn with olive oil and wrap each ear of corn tightly in aluminium foil.
- Place on the prepared grill. Cook for approximately 15 minutes, turning occasionally until corn is tender.
- Remove the corn kernels.
- Combine the cooked quinoa, grilled corn kernels and the remaining ingredients. Season with salt and mix until well combined.
Notes
Most packaged quinoa are pre-washed. However it is always safe to wash the quinoa before cooking.
