Mango Quinoa Salad

Ingredients

cup
Quinoa
2
cups
Water
2
Corn Ears kernels
removed

tbsp
Olive Oil
1
Ripe Mango
diced
1/4
cup
Grapes
cut into halves
1
Cucumber
seeded and diced
2
tbsp
Lemon Juice
2
tbsp
Flat Parsley
coarsely chopped
Salt to taste
Instructions
Rinse quinoa until water runs clear, drain and transfer to a medium pot.
Add 2 cups of water and bring to a boil over medium heat.
Cover and reduce heat and cover then let simmer for approximately 15 minutes.
Preheat an indoor or outdoor grill to medium heat and lightly oil grate.
Rub the ear corn with olive oil and wrap each ear of corn tightly in aluminium foil.
Place on the prepared grill. Cook for approximately 15 minutes, turning occasionally until corn is tender.
Remove the corn kernels.
Combine the cooked quinoa, grilled corn kernels and the remaining ingredients. Season with salt and mix until well combined.
Notes
Most packaged quinoa are pre-washed. However it is always safe to wash the quinoa before cooking.
