Ingredients
- 3 tbsp Light Olive Oil
- 2 tbsp Fresh Lime Juice
- 3 cloves Garlic chopped finely
- Sea Salt to taste
- Freshly Ground Black Pepper to taste
Quinoa Salad
- 1 cup Quinoa uncooked
- 1/2 tsp Kosher Salt
- 2 tbsp Red Onion finely chopped
- 2 tbsp Fresh Lime Juice
- 1 medium Ripe Mango peeled and diced
- 3 tbsp Red Onion finely chopped
- 1 medium Avocado peeled and diced
- Salt to taste
Instructions
- Marinate the salmon in lime juice and garlic. Place in the fridge for 20 minutes.
- Meanwhile, cook quinoa according to package directions. Let it cool at room temperature.
- Place quinoa in a bowl, add cherry tomatoes, red onions, fresh lime juice, and season with salt.
- For the mango-avocado, combine everything in a bowl and season with salt.
- Oil the grill pan and preheat over medium heat.
- Season both sides of the salmon with salt and pepper, and coat both sides with olive oil.
- Grill the salmon for 3 minutes per side or until firm to touch.
- To plate, divide the quinoa salad among two plates. Top with salmon fillet and mango-avocado mixture. Serve immediately.
