Ingredients
Homemade Pita Bread
- 4 cups All-Purpose Flour sifted
- 1 tablespoon Instant Yeast
- 4 teaspoons Olive Oil
- 1 1/2 teaspoons Kosher Salt
- 1 1/2 cups warm water
Chicken Kebabs
- 500 grams Ground Chicken (thigh part)
- 2 tablespoons Garlic minced
- 2 tablespoons White Onion minced
- 1 teaspoon Turmeric Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Kosher Salt
- pinch freshly ground Black Pepper to taste
Beef Kebabs
- 500 grams Ground Beef
- 2 tablespoons Garlic
- 2 tablespoons White Onion
- 1 teaspoon Turmeric Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Kosher Salt
- pinch freshly ground Black Pepper
Garlic-Yogurt Sauce
- 1 cup Plain Yogurt
- 2 tablespoons Garlic
- minced pinch Turmeric Powder
- pinch Salt to taste
Grilled Tomatoes
- 12 medium 12 Plum Tomatoes
- Cooking and Assembling
- 3 tablespoons Light Olive Oil for grilling of kebabs and tomatoes
- 3 tablespoons Light Olive Oil for pita bread
- 3 tablespoons 3 Iceberg Lettuce rinsed and trimmed
Instructions
Homemade Pita Bread
- Combine flour, instant yeast and salt with a mixer bowl. Use dough attachment. Turn on to low speed for a few seconds and combine dry ingredients.
- Add the oil and warm water. Continue mixing on low speed until the liquid ingredients are completely incorporated into the dry ingredients.
- Increase the mixer speed to medium. At this stage, the dough will start kneading. It will take about 5-7 minutes until the dough starts to form a ball. When the dough is smooth and not sticky, remove from the mixer.
- Flour your working surface. Knead the dough for few seconds and tuck all the sides in to form a ball.
- Lightly brush the mixer bowl with oil and place the dough back in the mixer bowl.Put some oil on top of the dough and cover with cling wrap.
- Place in warm temperature and let it rise until it has doubled in size, it will take about 1-2 hours.
- Once the dough has doubled in size, remove from the mixer bowl. Knock it down to deflate the air.
- Roll it out and cut into 12 portions. Form each piece into a ball.
- Cover it with a damp cloth and let it rest for 10 minutes.
- Roll out the dough into round shapes. Flour your working surface and the dough when rolling out.
- Stack rolled out dough in between of parchment papers. Cover them with a damp cloth and set aside until ready to use.
Preparation of Kebabs
Chicken Kebabs
- Combine ground chicken, garlic, onions, ground cumin, turmeric powder, salt and freshly ground black pepper in a big bowl.
- Shape the ground chicken into 7 pieces of kebabs.
- Place it on a tray with parchment paper.
- Cover with cling wrap and keep in the fridge until ready to use.
Beef Kebabs
- Combine ground chicken, garlic, onions, ground cumin, turmeric powder, salt and freshly ground black pepper in a big bowl.
- Shape the ground beef into 7 pieces of kebabs.
- Place it on a tray with parchment paper.
- Cover with cling wrap and keep in the fridge until ready to use.
Garlic Yogurt Sauce
- Combine yogurt, garlic, turmeric powder and salt in a small bowl. Mix until well combined. Keep in the fridge until ready to use.
Ready To Cook?
Kebabs
- Using a griddle. Heat the oil over medium heat. Add the tomatoes on one side.
- Put the beef kebabs and grill until golden brown and tender, it will take about 3-5 minutes on each side.
- Transfer the beef kebabs to a plate.
- Put the chicken kebabs to griddle and grill until golden brown and tender, it will take about 3-5 minutes on each side.
- Transfer the chicken kebabs to a plate.
- Continue to grill the tomatoes until they are soft, don’t forget to turn all the sides for even cooking.
- Transfer the tomatoes to a plate.
Garlic-Yogurt Sauce
- Use a cast-iron skillet. Heat 1 teaspoon of oil over medium-high heat.
- Once the pan is starting to smoke, add the pita bread dough and watch it closely. Pita bread will only take about 30 seconds to cook on each side. When the pita bread starts to puff up, flip it over to cook the other side.
- Transfer the pita bread to a serving plate.
- Arrange the iceberg lettuce on a big serving plate. Add the chicken and beef kebabs. Put the grilled tomatoes around the kebabs. Serve with pita bread and garlic-yogurt sauce.
