Please shy away from using compound chocolate in making chocolate mousse, our goal is to have a final product that will make everyone rejoice in scrumptious pleasure. Chocolate couverture is real chocolate that has cocoa butter, which gives your mousse a smooth-milky texture, and the taste is heaven! The brand used for my mousse is Callebaut’s milk chocolate callets. There are many good brands of good chocolates at the supermarkets, such as Lindt, Godiva, Ghirardelli, etc., just look for the percentage of the chocolate. I suggest to use compound chocolate for garnishes or templates; this is cost-efficient.
