Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 2 Corn Ears kernels removed
  • 1 tbsp Olive Oil
  • 1 Ripe Mango diced
  • 1/4 cup Grapes cut into halves
  • 1 Cucumber seeded and diced
  • 2 tbsp Lemon Juice
  • 2 tbsp Flat Parsley coarsely chopped
  • Salt  to taste

Instructions

  • Rinse quinoa until water runs clear, drain and transfer to a medium pot.
  • Add 2 cups of water and bring to a boil over medium heat.
  • Cover and reduce heat and cover then let simmer for approximately 15 minutes.
  • Preheat an indoor or outdoor grill to medium heat and lightly oil grate.
  • Rub the ear corn with olive oil and wrap each ear of corn tightly in aluminium foil.
  • Place on the prepared grill. Cook for approximately 15 minutes, turning occasionally until corn is tender.
  • Remove the corn kernels.
  • Combine the cooked quinoa, grilled corn kernels and the remaining ingredients. Season with salt and mix until well combined.

Notes

Most packaged quinoa are pre-washed. However it is always safe to wash the quinoa before cooking.
