Ingredients

  • 250 grams Spaghetti
  • 1/4 cup Light Olive Oil
  • 2 tablespoons Garlic chopped finely
  • 250 grams Spanish Chorizo cut into small dice
  • 6 pieces Plum Tomatoes deseeded and cut into strips
  • 100 grams Fresh Basil Leaves chopped coarsely
  • Salt & Pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain, toss in olive oil and set aside.
  • Using a frying pan, heat the light olive oil over medium heat.
  • Sauté the garlic for 1 minute.
  • Add the chorizo and fry for 3 minutes.
  • Put in the tomatoes and cook until they are softened.
  • Add the cooked pasta.
  • Season it with salt and pepper.
  • Add the fresh basil leaves and mix until the pasta is well coated with the sauce.
  • Divide into 4 serving plates. Serve while hot.
