Ingredients
- 250 grams Spaghetti
- 1/4 cup Light Olive Oil
- 2 tablespoons Garlic chopped finely
- 250 grams Spanish Chorizo cut into small dice
- 6 pieces Plum Tomatoes deseeded and cut into strips
- 100 grams Fresh Basil Leaves chopped coarsely
- Salt & Pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain, toss in olive oil and set aside.
- Using a frying pan, heat the light olive oil over medium heat.
- Sauté the garlic for 1 minute.
- Add the chorizo and fry for 3 minutes.
- Put in the tomatoes and cook until they are softened.
- Add the cooked pasta.
- Season it with salt and pepper.
- Add the fresh basil leaves and mix until the pasta is well coated with the sauce.
- Divide into 4 serving plates. Serve while hot.
