Do you have overripe bananas? Make them into these fabulous Banana Bread With Walnuts! It is a perfect dish for breakfast, brunch, dessert or even for snacks. You can also make these into muffins. Just switch the loaf pan to muffin tins. These treats are moist, soft, sweet and the texture in your mouth is absolutely divine!
200mlCanola Oil 3/4 cup + 1 tablespoon, or Vegetable Oil
3largeEggs
1tspBaking Soda
1/4tspBaking Powder
1tspGround Cinnamon
150gmsWalnuts unsalted and roasted, coarsely chopped and reserve about 4 tablespoons of chopped walnut for sprinkle on top of banana bread, 1 1/2 cups
Instructions
Preheat the oven to 180 degrees C (350 degrees F).
Roast the walnuts in the oven for 5-7 minutes. Cool it down and chop coarsely. Set aside.
Using a large bowl, combine flour, baking powder, baking soda, sugar and cinnamon.
In another bowl, combine oil, milk and eggs.
Using a spatula or wooden spoon, fold in the flour mixture into the wet ingredients until well combined. Add the mashed bananas and fold thoroughly until the batter is thick and chunky.
With a spatula, fold in the walnuts into the batter until well incorporated.Line the loaf pans with parchment paper in the middle with excess on the edges, this will help to lift up the banana bread easily after baking in the oven.
Fill the prepared loaf pans (3/4 full) with the batter. Sprinkle the chopped walnuts on top.
Bake in the oven for 30-35 minutes or until the bread is golden brown or until a toothpick inserted comes out clean.
Place the loaf pan on a cooling rack and rest for few minutes.
Once it has been cooled down, lift up the banana bread from the loaf. Serve warm.
Notes
This recipe can make 2 – 7 1/2 x 4 2 loaf pans or 1 – 9 x 5 x 3 loaf pan.
