Ingredients
- 250 ml Hot Water
- 1 tbsp Instant Coffee Powder
- 250 gram-pack Sponge Fingers Biscuit
- 250 gms Mascarpone Cheese
- 250 gms Whipping Cream
- 170 gms Caster Sugar
- 50 gms Dark Chocolate roughly chopped or grated
- 2 tbsp Cocoa Powder optional
Instructions
- Mix the coffee and hot water until well combined. Set aside and let it cool at room temperature.
- Meanwhile, in a big bowl, using an electric hand mixer, combime together the mascarpone and whipping cream and mix until smooth and creamy.
- Add the sugar and continue mixing the sugar has completely dissolved. Set aside.
- Arrange the ladyfinger biscuits standing up on the sides of the trifle bowl.
- In the middle of the trifle bowl, line the bottom with sponge fingers.
- Drizzle the coffee over the sponge finger.
- Spread 1/2 of mascarpone-cream mixture evenly on top.
- Sprinkle grated chocolate, just enough to cover the mascarpone mixture.
- Repeat twice. Chill in the fridge for two hours.
- Just before serving, sprinkle with cocoa powder and grated chocolate.
Notes
- Ladyfingers are available in many supermarkets. I bought this packed ladyfinger biscuits at S&R Grocery Store at Fort Bonifacio Taguig for P180.00 (4$). This one pack can produce two serving bowls–served in an 8-inch trifle bowl.
- For the mascarpone-cream mixture, just double the recipe to fill 2 medium trifle bowls. You can create this dessert in a square baking dish if trifle bowl is not available.
