Ingredients
- 250 grams Linguine
- 4 tablespoons Light Olive Oil
- 300 grams Italian Garlic Sausage
- 1 tablespoon Garlic minced
- 250 grams Cherry Tomatoes cut into halves
- 1 cup Baby Arugula washed and trimmed
- 2 tablespoon Parmesan Cheese
- Salt to taste
- Freshly Ground Black Pepper to taste
Instructions
- Boil water in a large pot. Add 1 teaspoon of salt and 1 tablespoon of Oil. Add the pasta and cook according to package directions. When the pasta is done, drain right away.
- Meanwhile, heat olive oil in a large skillet over low-medium heat. Remove casings from sausage and break the sausage into bite-sized pieces and add them to the pan; cook for few minutes or until browned.
- Add garlic, cook for one minute and put the cherry tomatoes, continue stirring and cook for 3-5 minutes. Remove the pan from heat. Add pasta, and arugula; toss well. Season with salt and pepper.
- Sprinkle with Parmesan cheese. Serve immediately.
Notes
Sausage is always a crowd-pleaser. Grilled or sautéd, fried or crumbled, it gives sauces, soups, or stews a rich flavor. Since Italian Sausage is heavy to eat, I combined it with an oil-based pasta rather than cream-based.to balance the lovely flavors of all these ingredients!
