INGREDIENTS:
Chicken
- 4 Chicken Thighs, with skin and bones
- 2 Chicken Breasts, with skin and bones cut into halves
- ¼ cup All-Purpose Flour, for dredging
- ¼ cup Vegetable Oil
- ¼ cup Capsicum, cut into small dice
- ¼ cup White Onion, chopped finely
- Salt & Pepper, to taste
Sauce
- 5 cloves of garlic, chopped finely
- 2 cups, Fresh Mushrooms, trimmed & sliced
- ½ cup Dry White Wine
- 3 cups Canned Diced Tomatoes with their juice
- 2 cups Chicken Stock
- ¼ cup Capers, drained
- 1 tsp Ground Oregano
- 10 pcs Fresh Basil Leaves
- 4 spring fresh Rosemary
PROCEDURE:
- Season the chicken with salt and pepper.
- Dredge the chicken pieces in the flour and coat lightly.
- Start frying the chicken. Heat the oil over medium heat. Add the chicken and fry just until brown. Once cooked, transfer it to a plate. Set it aside.
- Using the same pan with a lower heat, add the onions, garlic, and mushrooms. Season it with salt and sauté the mushrooms until the edges are brown. Pour the wine and let it simmer until reduced by half. Add the tomatoes with their juice, chicken stock, capers, oregano and fresh rosemary.
- Simmer for 10 minutes or until the sauce becomes thicker.
- Season it with salt and pepper.
- Put the chicken back into the pan. Make sure that the chicken is coated with sauce. Simmer again for 5 minutes.
- Serve while hot.
