This Pineapple Chicken Stir-Fry is a colorful blend of tender chicken, crisp vegetables, and juicy pineapple tossed in a flavorful sauce. Sweet, savory, and wonderfully fresh, it’s a delicious way to bring a taste of the tropics to your dinner table!
INGREDIENTS:
- 3 tbsp Light Olive Oil
- 2 medium Red Onions, cut into slices
- 2 small Zucchini, cut into slices
- 1 ½ Fresh Pineapple, cut into bite-sized pieces
- 4 Skinless Chicken Breast Fillets, cut into bite-sized pieces
- ¼ cup Soy Sauce
- ¼ cup Water
- 1 tbsp Brown Sugar
- 2 tsp Cornstarch
- 2 tsp Water, add it to the cornstarch
- Pinch of Paprika
- Salt & Pepper, to taste
PROCEDURE:
- Using a frying pan, heat oil over medium heat. Fry the zucchini until tender-crisp and season it with salt. Transfer to a plate.
- In the same frying pan, add a little oil and sauté the onion until translucent. Add the slices of pineapple and stir-fry for 30 seconds. Transfer to a plate.
- Add the chicken to the same pan. Season it with salt, pepper, and paprika. Cook chicken until tender.
- Make a little space in the pan for the stir-fry sauce. Pour soy sauce, water and sugar.
- To thicken the sauce, make a cornstarch slurry. Mix cornstarch and water, and then add it to the pan. Simmer for 5 minutes.
- Add the zucchini, pineapple, and onions back to the pan. Mix them altogether.
- To assemble, transfer the pineapple chicken stir-fry to a serving plate. Ready to serve.
