Ingredients
- 250 grams Dried Linguine Pasta
- 1 tablespoon Light Olive Oil
- 2 tablespoons Fresh Lemon Juice
- 1 Lemon
- 1 piece Lemon wedges
- 250 grams Tomatoes blanched, skinned, deseeded and cut into dice
- 3 cloves Garlic finely chopped
- 1 can Tuna Flakes oil drained
- 250 grams 1/4 cup Light Olive Oil
- 2 tablespoons Capers drained and coarsely chopped
- 2 tablespoons Fresh Parsley finely chopped
- Salt and Pepper to taste
Instructions
- Boil water in a large pot. Add 1 teaspoon of salt and 1 tablespoon of Oil. Add the pasta and cook according to package directions. When the pasta is done, drain right away.
- Meanwhile, heat the olive oil in a large pan over medium heat.
- Add the blanched tomatoes and garlic. Cook for 3-5 minutes.
- Add the lemon juice, tuna and capers. Cook until the sauce thickens.
- Add the cooked pasta and 1 tablespoon of chopped parsley to the tuna mixture and toss until well combined.
- Remove the pan from the heat.
- Season the tuna pasta with salt and pepper.
- Divide the pasta mixture among serving bowls or big serving dish.
- Serve with lemon wedges and add chopped parsley on top.
Notes
This dish is best served immediately after cooking, when hot.
You can enjoy canned tuna in moderation. The small percentage of fat present in canned tuna is mostly the healthy unsaturated kind, including omega-3 fatty acids.
