Minestrone Soup

Minestrone means thick soup, usually made with vegetables and pasta. This recipe is one of my favorite Minestrones because the flavors of the veggies herbs and spices just mix so well together. It’s absolutely deliziosa!

Ingredients

 

  • 2 tablespoons Light Olive Oil
  • 1/4 cup Red Onions, chopped finely
  • 1 Tablespoon Garlic, chopped finely
  • 1/4 cup Celery, cut into slices
  • 1/4 cup Green Bell Pepper, small dice
  • 1/4 cup Red Bell Pepper, small dice
  • 1/2 cup Plum Tomatoes, small dice
  • 200 grams Bacon, cut into thick strips
  • 1 1/4 cup canned Diced Tomatoes
  • 1/2 cup Potatoes, small dice
  • 1/2 cup Carrots, small dice
  • 3/4 cup Orecchiette Pasta, uncooked
  • 8 cups Water
  • 1 teaspoon Fresh Oregano
  • 5 pieces Dry Bay Leaves
  • 1 cup White Kidney Beans
  • 3/4 cup Zucchini. small dice
  • 1/2 bunch of Fresh Basil, chiffonade
  • 1/2 cup Grated Parmesan Cheese, for garnish
  • Salt & Pepper, to taste
  • Fresh Oregano, for garnish

Procedure

  1. Using a large saucepan. Heat the oil over medium heat.
  2. Add the red onions, garlic and celery. Sauté  for about 2 minutes or until translucent.
  3. Lower the heat. Add the bell peppers and tomatoes. Continue to stir until the vegetables have softened. It will take about 5 minutes.
  4. Push the vegetables on one side of the pan. Add the bacon and cook until golden in color, stirring occasionally.
  5. Put the canned tomatoes, carrots, potatoes and pasta one at a time. Mix everything together so that all the flavors will blend together. It will take about 2 minutes.
  6. Increase the heat to medium. Add the water, oregano and bay leaf. Continue to simmer until the pasta is al dente.
  7. Add the basil and give it a good stir. Season with salt and pepper. Let it simmer on low heat for 2-3 minutes.
  8. Divide the soup in serving bowls. Garnish with fresh oregano and grated parmesan cheese.
